Preparation:
Strofinate lo stinco con la mezza cipolla e salatelo, mettetelo in una casseruola e cospargetelo con un agenerosa manciata di pepe e irroratelo con l'olio; aggiungete il burro e cuocete il forno caldo a 180° per un'ora e mezza circa. Preparate un trito aromatico con l'aglio,il rosmarino,la salvia e il timo. Sfornate lo stinco, irroratelo con il vino e copritelo con il trito aromatico; rimettetelo in forno e cuocete per un'altra ora circa. Durante tutta la cottura, bagnate lo stinco con il suo fondo di cottura allungato con il brodo caldo.
