Montare i tuorli con metà zucchero, a parte montare gli albumi a neve fermissima con lo zucchero rimanente, unire gli albumi montati ai tuorli mescolando con delicatezza dal basso verso l'alto. Aggiungere la farina setacciata, la scorza di limone e il burro fuso e raffreddato, sempre mescolando con delicatezza. Versare il composto in una teglia da forno imburrata e infarinata ed mettere in forno già caldo a 180° per circa 25 minuti.
