Schiacciate le patate, unite metà del burro, il grana grattuggiato, i tuorli, il prezzemolo, il prosciutto e il dado sbriciolato. Lavorate l'impasto aggiungendo il latte, il sale e il pepe. Montate a neve l'albume e unitelo all'impasto. Imburrate uno stampo, spolverizzatelo con un pò di pangrattato, versate metà dell'impasto; coprite con i formaggi e versate l'altra metà dell'impasto. Spolverizzate con pangrattato e fiocchetti di burro, cuocete in forno caldo a 200° per 30 minuti. Lasciate raffreddare, sformate su un piatto da portata e servite.
