Preparation:
Schiacciate le patate, unite solo i tuorli delle uova, sale, pepe, il pecorino, il prezzemolo e mescolate bene. Con l'impasto fate delle palline grosse come noci, date la forma di crocchetta e passateli negli albumi, sbattuti con un pizzico di sale, e poi nel pangrattato. Friggeteli in olio ben caldo fino a quando si forma una bella crosticina dorata.
Note:
Le crocchette si possono farcire con salumi, formaggio o altre verdure ( tipo carote)basta inserire l'ingrediente ( in quantità giuste) nell'impasto.
